A taurina é muito importante no metabolismo e está presente em níveis particularmente elevados no cérebro, músculo esquelético, coração e retina do olho.  Desempenha papéis importantes no desenvolvimento do sistema nervoso, retina e tecido muscular. A taurina é conhecida pelo seu papel na síntese do sal da bile e tem funções cruciais nas vias de desintoxicação do fígado. Taurina também parece ter um efeito estabilizador nas membranas celulares e é importante na manutenção da distribuição normal extra e intracelular de cálcio. Isso, por sua vez, tem implicações na excitabilidade neuronal e na regulação da pressão osmótica. Na retina, a l-taurina ajuda a manter a estrutura e a função das células visuais.
